Description
English: Local specialty komo-dofu on sale in a market in Takayama, Japan. This product is made by wrapping tofu in a straw mat and boiling it in soup stock, resulting in the distinctive ridged texture seen on the exterior, as well as swiss cheese-like voids throughout created in the boiling process.
